Order snail doenjang at a ssambap place and here's what usually happens. You stir the pot with your spoon, hunting for snails. Find one and you're pleased. Find two and it's your lucky day.
At Ureong Ssambap Igane in Seoksu-dong, Anyang, that game doesn't exist. There's nothing to hunt for. The top of the pot is already covered in snails.

The star is inside the pot

All those dark little nuggets in the pot? Every single one is a snail. It was my first gang-doenjang where the snails show up before the doenjang does. One spoonful brings up three or four chewy snails at once, with salty doenjang filling the gaps.
The snails here are the real deal. Every bite has that bouncy little pop, so the gang-doenjang feels less like a side and more like a main dish. A doenjang jjigae with tofu comes separately, so here's the system: gang-doenjang goes on your wraps, jjigae goes on your rice.
How to build the perfect wrap

- Open up one big leaf.
- Add a little rice and a piece of jeyuk or bulgogi.
- Finish with a heaped spoonful of snail gang-doenjang.
- Chase it with a bite of green chili.
