In Mullae-dong, Seoul's old metalworking neighborhood, a restaurant with 'iron' in its name gets everything right: Pyongyang naengmyeon, bibim naengmyeon, suyuk, dumplings. Over 2,500 reviews and still rated 4.9.
I have an old restaurant theory.
"In neighborhoods that work with iron, the broth is always good."
People who spend their day around molten metal and machine oil want a hearty, hot bowl, and a cold one that cools them right down. A restaurant in that kind of neighborhood can't survive on lazy broth. Mullae-dong, famous for its metalworking alleys, and Cheolsanjang, a restaurant with cheol (้ต, iron) right in its name, proved the theory perfectly.
A 30-second glossary
- Naengmyeon โ cold noodles. Two classic styles below.
- Pyongyang naengmyeon โ buckwheat noodles in a clear, chilled meat broth, named for the North Korean capital. Famously subtle.
- Bibim naengmyeon โ buckwheat noodles tossed in a sweet-spicy red sauce instead of broth.
- Suyuk โ boiled meat, thinly sliced. Here it's satae, beef shank.

Bowl #1: Pyongyang naengmyeon

Clear broth sloshes in a stainless-steel bowl. On top: buckwheat noodles, sliced meat, a soft-boiled egg, cucumber. People say the first sip of Pyongyang naengmyeon tastes bland. But by the second and third, the deep flavor of the meat broth creeps up on you. The noodles have that short, snappy bite that only buckwheat gives you.
New to Pyongyang naengmyeon? Remember just one thing: hold off on the vinegar and mustard, and take three sips of broth first.
Bowl #2: bibim naengmyeon

If Pyongyang naengmyeon is the far end of subtle, bibim naengmyeon is the opposite end. A soft-boiled egg and sesame seeds sit on a bright red sauce. The sweet-spicy sauce clings to the buckwheat noodles, and if you alternate, one bite of Pyongyang, one bite of bibim, you're stuck in an endless spicy-then-cool loop. Going as two? Order one of each and share. That's the correct answer.
Plate #3: suyuk and mandu

A naengmyeon house shows its real skill in the side dishes, because a place that makes broth is, in the end, a place that boils meat. The suyuk comes thinly sliced, tender and moist, and it's great alternated with sips of the cold broth. The big Pyongyang mandu are packed full, and you can order a half plate (โฉ6,000), so they're an easy add-on.

How to order (even with zero Korean)
- Say "Pyongyang naengmyeon hana, bibim naengmyeon hana juseyo" (ํ์๋๋ฉด ํ๋, ๋น๋น๋๋ฉด ํ๋ ์ฃผ์ธ์) โ one of each, please. The perfect order for two.
- Hungry? Add "Yang mani juseyo" (์ ๋ง์ด ์ฃผ์ธ์) โ a bigger portion, please. Extra noodles cost nothing.
- For a side, ask for a half plate: "Suyuk ban jeopsi juseyo" (์์ก ๋ฐ ์ ์ ์ฃผ์ธ์) for half a plate of suyuk, or swap in mandu for dumplings.
- When the naengmyeon arrives: three sips of broth before you touch the vinegar and mustard.
